A delicious nut roast that can be served hot or cold! Nuts are the unsung beauty heroes of the world as they contain nutrients that can create glowing skin, promote regeneration of skin cells and can even fight off bacteria that may contribute to acne.
Prep: 20 minutes
Cooking: 45 minutes or until golden brown
1 garlic cloves
2 tbsp extra virgin avocado oil
125g cashew nuts
4 tbsp tomato paste
1 red pepper
2 celery sticks
1/2 tsp thyme
1/2 tsp rosemary
Dice the onion and garlic. Pop into a saucepan with 2 tbsp extra virgin avocado oil. Cook until soft.
Grate the carrot and add to the pan.
Place the carrot, onion, cashew nuts and tomato paste into a blender and process until smooth.
Chop up the almonds, pepper, celery and courgettes.
Place the pepper and celery into the saucepan for a few minutes until soft. Add in the courgettes and continue to sweat the vegetables until soft.
Add the herbs, processed mixture and almonds into the saucepan.
Place the mixture into a greased and lined baking tin in a preheated over of 180°C for 45 minutes or until golden brown.
Allow the loaf to cool for 10 minutes before serving.
Great to be served with a delicious salad or roasted vegetables!
