I absolutely LOVE pancakes and honestly could eat them for breakfast, lunch, dinner, dessert…literally at any time of the day. They are so easy to make and with only a few ingredients, you can whip the batter up and have the pancakes on the plate in less than 10 minutes.
Cooking Time: 10 mins
1 cup cashew milk
2 tbsp soaked chia seeds
1 cup flour (any) or oats
2 tsp baking powder
1.5 tbsp avocado oil
Tips for making pancakes:
Let the batter rise for at least 3 minutes. It takes a few minutes of the baking powder to do its job!
Use a medium heat rather than a high heat.
Look for the edges to be cooked and then flip.
Use avocado oil rather than olive oil because of its high smoke point!
