A great alternative for a dessert using only plant-based fresh ingredients. Chia seeds are not only an excellent source of omega-3 fatty acids, fibre and iron but also are rich in calcium! There are 233 milligrams of calcium in 2.5 tbsp of chia seeds which is almost the same amount as 1 cup of milk (299 milligrams).
Always try to make sure you pre-soak chia seeds. If they are not pre-soaked they can actually have quite a dehydrating effect (think of how much water they soak up!) and can be difficult for our bodies to properly utilise their benefits.
Prep: 15 minutes + 4hrs soaking chia seeds
3x tbsp chia seeds
9x tbsp cashew milk
2x passion fruit
Pre-soak chia seeds in cashew milk for four hours and leave in fridge (can also be left overnight)
Blend strawberries to form a puree and place in bottom of jar
Add pre-soaked chia seeds on top of blended strawberries
Blend banana and place on top of chia seeds
Scoop out the passion fruit and place on top of banana
Add slices of banana on top (*optional)
