Chia seeds are the most versatile ingredient! You can use or add them into nearly everything.
Not only that, pre-soaked they form a texture that can firstly bind ingredients together (can be used as an egg replacement in certain recipes) but also create their own amazing dish, like these lollies!
AND they also have incredible health benefits – two of which being they are a great source of omega-3 essential fatty acids and calcium.
They are the most beautifying little seeds.
These chia seed lollies are my new obsession.
They are so much fun to make and you can really play around with the colours.
For the colours, I used a blend of strawberries and raspberries (pink) and blueberries (blue).
They are also SO easy to make and contain no added refined sugar.

Colourful Chia Seed Lollies
- 6x tbsp chia seeds
- 1x cup cashew milk
- 1/3 cup raspberries
- 1/2 cup blueberries
- 1/3 cup strawberries
- 1/2 cup water
Cover the chia seeds in cashew milk and leave to soak in the fridge for 4hrs or overnight.
Blend the raspberries and strawberries for the pink colour.
Blend the blueberries for the blue colour.
Split the pre-soaked chia seeds into two bowls. In one bowl mix in the blended strawberries/raspberries and in the other mix in the blended blueberries.
Pour into lollipop containers. If the liquid feels too gloppy then add in the 1/2 cup of water.
Leave to freeze for 4+ hours or overnight.
To pop out of the container when frozen, gently place in hot water for a few seconds at a time. Make sure it doesn't melt though so keep your eye on it.
