This tasty breakie is perfect for busy and quick mornings when you have hit that snooze button too many times (as I do way too often) and only have a couple of minutes to spare between getting ready and leaving the house.
I kept seeing overnight oats popping up in the nutrition world and I just had to give them a go!
So what exactly are ‘overnight oats’? The idea is you add the ingredients to a jar, pop them in your fridge and then the oats soak up the liquid and make the perfect breakie overnight.
They are perfect for those grab and go breakfasts, especially when those crafty mornings sneak up on you and you literally have no time.
No longer can we use the excuse to not have breakfast! Plus you can add in whatever ingredients take your fancy. For me it was cinnamon, orange and coconut. Sounds like a strange combo but it definitely works!

Overnight Cinnamon Buckwheat Oats
- 3 tbsp cinnamon
- 1 orange zest
- 1/2 cup cashew milk
- 1/2 cup water
- 1 cup buckwheat oats
- 2 tbsp granola
- 3 tbsp walnuts
Place buckwheat oats, water, cashew milk and cinnamon into a bowl and mix well.
Leave to soak in the fridge overnight (until all liquid fully soaked into oats).
In the morning, add the grated orange zest, granola and walnuts. Sprinkle with more cinnamon if desired.
