A light, fluffy and creamy dessert that can be served in any which way you like!
Usually mousse is made with raw egg whites but my version is egg free (not a fan of using raw eggs!).
Feel free to add in any other berries – all they need to be is soft and easy to mash.
For the berries, I added in raspberries and strawberries for a burst of flavour. I used a mixture of coconut milk and coconut yogurt to give it that creamy and soft texture.
I sprinkled it with pistachios for a bit of crunch and topped with a few raspberries and blueberries.
DELICIOUS – enjoy!
Berry & Coconut Mousse Recipe
- 1/2 can coconut milk
- Handful strawberries
- Handful raspberries
- 1/2 tbsp honey
- 3 tbsp coconut yogurt
Leave the coconut milk in the fridge overnight to separate the liquid and milk.
Once separated, scoop out the coconut milk.
Blend the strawberries, raspberries, honey, coconut yogurt and honey in a food processor until smooth.
Once smooth, add in the coconut milk and whisk with either a fork or whisker - this method works better than adding it into the food processor.
Add the mixture into separate glasses and pop into the refrigerator for a few hours to set.
Sprinkle with pistachios, blueberries and raspberries.
